Where To Buy Beef Kidney
A few decades ago, kidney could still be found in mostsupermarkets. Unfortunately, today they are not always so easy to come across.
Ethnic grocers often sell kidney as do local butchers. Ask whoever stands behind the glass display case for an order of fresh kidney. If they dont have any at the time, you may be able to make a custom order and have them source it for you.
If you prefer to shop online, I highly recommend grass-fed beef kidneys from US Wellness. They offer grass-fed beef, bison, lamb and goat kidney.
As with most foods, seek a fresh source of the best quality you can access. Some people consume conventionally raised organ meats without any problems, however, I prefer to prioritize grass-fed organs.

How To Cook Beef Kidney
Cooking time may vary due to the size of kidney. I cook the average 16 ounce beef kidney for 8 minutes, extra-large ones may go for as long as 10 minutes. Lamb, sheep, and goat kidneys are smaller, typically I only boil them for 4 to 5 minutes or so.
Boiling beef kidney for 8 minutes cooks the outside while leaving the inside rare. For a well-done kidney, boil for as long as 12 minutes.
I recommend you stop early rather than continue longer and enjoy the tender inside. Kidney has a soft texture and flavor full when kept rare.
Most people find rare and blue rare meat digests better than medium and well done.
The more you cook kidney, the more it shrinks. As it condenses, it will become more firm. Overcooked kidney will be slightly rubbery. This texture is nothing like a tough piece of meat but you will need to chew it more and the flavor is noticeably blander.
What Are Beef Kidneys
A beef kidney is an offal of a cow besides other common organs like heart, liver, or intestines.
One ox will have two kidneys, which are relatively larger compared to the pork counterpart.
Beef kidneys have a dark red color and a rough texture.
The reason why some people dont prefer cattle kidneys, including beef kidneys, is that they smell of urine.
Like humans, this animal uses kidneys to filter toxins out of the blood and to excrete, thats why it has the smell of urine.
However, this can be eliminated by a proper way of preparing and cooking.
When being cooked, beef kidneys have a nice texture which is different from the sandy mouth-feel of a cattles liver.
Beef kidney is one of the key ingredients to make steak and kidney pie.
Eating dishes made from beef kidneys will provide you with essential nutrients that your body needs, such as Vitamin B12, Vitamin D, riboflavin, pantothenic acid, iron, and zinc.
There has been a conception in Asian cuisine that beef kidneys can benefit your kidneys, so there is no harm in consuming it at all.
Beef kidneys are a rich source of key essentials, even more than muscle meat.
However, they are low in calories, which makes them perfect for those who dont want to keep their weights in line.
On average, a serving size of raw beef kidneys will provide 29 calories, in which seven calories from fat.

How To Make This Delicious Stew
Start off by coating the cubed beef in seasoned flour and browning it in a frying pan. Do this over quite a high heat so that the meat browns nicely. If the heat is too low the meat will release juices and stew rather than brown. Dont overcrowd the pan either, rather brown the meat in batches. Once browned, transfer to the slow cooker.
Next fry the chopped kidneys in the same pan until they turn colour, then add then to the beef in the slow cooker.
Soften the onions and chopped garlic in the same pan. You may need to add an additional tablespoon of oil to do this. Transfer to the slow cooker.
Finally, fry the mushrooms until they soften and release their juices. Transfer them into the slow cooker.
Now add the shredded cabbage, grated potato and chopped carrots. Pour in the prepared stock and the red wine. Add the Worcestershire sauce, tomato paste and thyme. Season with salt and pepper, stir to combine all the ingredients and then set the heat on the slow cooker.
Leave for 6 hours on a high setting, or for 8 hours on a low setting.
If you find you do need to thicken the stew drizzle in a slurry of 2 teaspoons cornflour and 2 tablespoons water and let the stew simmer for a few minutes longer. Be careful. You may not need all the cornflour mixture.

Beef Kidneys With Ceps And Onions Recipe
For the others, those who dont blanch at the mere mention of the words tripe or beef tongue, those who own a dog-eared copy of the nose-to-tail bible* or have it on their wishlist, here is the dish I made last weekend with the beef kidneys Id bought from my organic butcher an entirely uneventful visit this time, 100% free of any impulse to punch anyone.
The offal fairies must have been watching over me from their flying udders, because things turned out very well in the end an out-and-out success according to Maxence, the sauce dark and silky, the kidney slices springy but yielding.
This revealed that the kidneys of lamb and veal were milder, easier to deal with, and thus preferable to those of beef , but that the latter could be effectively tamed by a good dousing of vinegared boiling water . I also read that beef kidneys fared best in plats en sauce, i.e., dishes with a sauce component, but the handful of recipes I found couldnt seem to reach a consensus on whether the kidneys should be boiled to death, or briefly seared.
I didnt have all day, so I decided a brief searing would do.
