Traditional Steak And Kidney Pie Recipe

While the U.S. and the UK may be similar in many ways, sharing the same language and a similar melting pot culture, we do have some significant differences. They drive on the left, we drive on the right, they use the metric system while we’re still holding out with the imperial system, and they have real royals while we have … Kardashians. Perhaps the most significant way we differ, however, is in what we consider to be acceptable cuisine. Case in point: kidneys. While many Americans recoil in horror at the thought, Brits have long considered this organ a delicacy.

Whether you’re an ex-pat, an Anglophile, or just someone who’s feeling brave enough to try new things, in-the-know kidney eaters say this meat achieves its pinnacle of perfection as part of a steak and kidney pie. Recipe developer Jennine Bryant is British and tells us, “Steak and kidney pie is a deeply traditional English meal you’ll find it on the shelves in any reasonably sized supermarket or in any pub restaurant. You can even get them in fish and chip shops!”

While she usually blogs about vegetarian recipes at The Marshside Pantry, she didn’t want to pass up a chance to share this traditional recipe with us kidney-deprived Yanks. “I think it’s good to try new things and different flavors, Bryant says, adding, “If you are a little adventurous, you never know what you might discover.”

The Other Ingredients Shouldn’t Be Too Tricky To Find

    Steak and kidney pie recipe

When preparing this dish, Bryant used something she called “braising steak,” but in American English, it turns out this just means chuck steak. In fact, flank, skirt, hanger, or any other cheap cut of steak would also work here. With a sufficient amount of braising, all of these cuts will become fairly tender, and a more delicate prime cut might be overwhelmed by the strongly flavored kidneys.

Bryant also used a brand of puff pastry that appears to be available only in the UK, and she says the package weighed 350 grams, which is about 12 ounces. Look for puff pastry that’s approximately the same weight.

As for the rest of the ingredients, they’re pretty universal. You’ll need olive oil, butter, an onion, flour, beef stock , Dijon mustard, a bay leaf, salt, pepper, Worcestershire sauce, and an egg.

This Steak And Kidney Pie Starts With A Meaty Stew

Heat up a large frying pan or skillet and add the oil, the butter, and the sliced onion. Fry the onion, stirring, until it’s soft and translucent. At this point, add the diced chuck steak and cook until it’s slightly browned. Sprinkle the flour over the beef and onions and stir it in. Cook for a few more minutes, then add the kidneys and cook them for a minute or two.

While the stew is cooling, preheat the oven to 425 degrees. Once the stew is sufficiently cool, spoon it into a deep pie pan and top it with a sheet of puff pastry. Trim off any pastry hanging over the sides, then crimp the edges with a fork. If you have any excess pastry, Bryant says you can always use it to mold little decorations for the top of the pie.

Take a sharp knife and cut a small cross right in the center of the pie, as this will help let the steam out and prevent any messy spillovers. As a final touch before the pie goes in the oven, beat the egg and then brush the beaten egg over the crust. Bake the pie for half an hour until it’s puffy and golden, then take it out of the oven to cool.

To make steak and kidney pie at home you will need the following ingredients.

    • Stewing Steak cut into 1 cubes and Ox Kidney cut into 1/2 cubes. I like to buy a piece of topside and a whole kidney, that way I can cut the meat to size myself, and get rid of any fat or gristle that may be in pre-chopped meat.
    • Flour seasoned with salt and pepper used to coat the beef
    • Onions approximately 2 cups
    • Potatoes approximately 2 cups
    • Carrots approximately 1 cup
    • Celery approximately 1 cup
    • Shredded Cabbage this is my secret for luscious gravy. The cabbage cooks away to almost nothing during cooking, and helps to thicken and flavour the gravy
    • Beef Stock You can use beef stock cubes to make it
    • Tomato Puree
    • Fresh Tomatoes
    • Olive Oil for browning the meat and onions
    • Cornflour used for thickening if needed
    • Salt and ground black pepper to taste
    • 1 packet Puff Pastry use shop-bought
    • 1 beaten Egg to brush the pastry

    Using Up Leftover Puff Pastry

One of the best things about this recipe is the leftover pastry. I slather the pieces with Nutella or strawberry jam and pop them in the oven for 10-15 minutes. Once cooled I dust them with icing sugar and dessert is sorted. Im no saint when it comes to food waste, but I do get a really good feeling when I manage to create something from leftovers.

Scruff Spends All Our Money These Pot Pies Are Born

When most people are down to their last $20, there are a few things they might consider doing. Some might build a fortress and barricade themselves in a corner until the next payday. Financially savvy people would probably find a way to invest that $20 and double it by the end of the week. Unsurprisingly, my husband Scruff did neither of those things. Instead, I married a man who once spent our last $20 on. ramekins! Yes RAMEKINS!!! Despite already having a set at home, he claims he was powerless against the well-placed big colourful sale signs and eye-catching flashing lights. That week, we had to dig into our savings just to get on the bus. Thanks to Scruff, we now had a new low point in our financial history.

Luckily every cloud has a silver lining, and when you own a lot of ramekins you have an excellent excuse for making pot pies. There are a few different pies we make at home, but for our blog I thought I would start with a steak and Guinness pie for St. Patricks Day which in my defence was only last week. This pie has big chunks of meat seared in a hot pan before being cooked in a pressure cooker with Guinness, mushrooms, rosemary, sage and nutmeg. The Guinness turns into a delicious gravy, and the meat becomes tender. After being divided into four of our many ramekins they are topped with pastry that is then cooked in the oven until puffy and golden.

Do I Have To Soak The Kidneys Before Cooking

Soaking kidneys is a matter of personal choice. Many recipes instruct to soak the kidneys in milk for at least 30 minutes, claiming that this process might purge any leftover animal bodily fluids and provide a milder flavor. Some choose to soak the kidneys in cold water with vinegar and lemon juice, but others simply clean and rinse them well and claim that’s enough to get rid of impurities.

    Homemade Steak And Kidney Pie

This homemade steak and kidney pie has it all its packed with juicy vegetables and succulent chunks of steak and kidney, swimming in delicious gravy and covered with a layer of crispy puff pastry.

My favourite bit is how the edges of the pastry are all crispy and golden and the middle has rested on the pie filling, causing the underside of the pastry to soak up some of the lovely meaty gravy.; Yummy.

This homemade steak and kidney pie is so easy to put together and doesnt take too long to make.; I normally make a double batch of the filling and freeze half, so when Im in a hurry I just have to defrost the filling in the microwave and cover with puff pastry and pop it in the oven for the ultimate homemade steak and kidney pie in half an hour.

Also note how I havent crimped the edges of the pie thats not me being lazy, its because I love the extra bits of puff pastry that you can break off the sides!

Its versatile too if you dont have puff pastry to hand then you could just serve the filling over rice with additional vegetables on the side.

You dont have to stick to either my choice or quantities of vegetables you could use a mixure of any root vegetable.; Sweet potato would be good with this, or chopped butternut; or why not stir a handful of frozen peas through before putting it into the pie dish?

    Cook The Meat And Cabbage

    • Set the electric pressure cooker to Meat setting and cook for 15 minutes.
    • If you are using a normal pressure cooker you will need to cook on full pressure for 15 minutes.
    • If you are cooking this in a saucepan on the stove you should cover the saucepan with a lid. Bring it to the boil, then reduce the head to a simmer and leave for 40 minutes. Keep your eye on it if it starts to boil dry, top up with extra stock.
