1 lb boneless round steak, trimmed
4 -6 russet potatoes, pealed and cubed
1 large onion, sliced and separated
1/2 cup flour
salt and pepper, to taste
1 cup water
1 pie crust

Steps:

  • Pre-heat oven to 350°F.
  • In a deep glass baking dish , layer meat, potato and onion, sprinkling flour over each layer.
  • Salt and pepper each layer. Pour water slowly over layers and top with rolled out crust. Roll edges of crust under around the edge and flute to seal edges to pan. Vent with knife several times.
  • Bake at 350° F for about one hour until water bubbles and gravy have formed. Pierce with a cake tester through vents for doneness of potatoes.

    When preparing this dish, Bryant used something she called “braising steak,” but in American English, it turns out this just means chuck steak. In fact, flank, skirt, hanger, or any other cheap cut of steak would also work here. With a sufficient amount of braising, all of these cuts will become fairly tender, and a more delicate prime cut might be overwhelmed by the strongly flavored kidneys.

    Bryant also used a brand of puff pastry that appears to be available only in the UK, and she says the package weighed 350 grams, which is about 12 ounces. Look for puff pastry that’s approximately the same weight.

    As for the rest of the ingredients, they’re pretty universal. You’ll need olive oil, butter, an onion, flour, beef stock , Dijon mustard, a bay leaf, salt, pepper, Worcestershire sauce, and an egg.

    Heat up a large frying pan or skillet and add the oil, the butter, and the sliced onion. Fry the onion, stirring, until it’s soft and translucent. At this point, add the diced chuck steak and cook until it’s slightly browned. Sprinkle the flour over the beef and onions and stir it in. Cook for a few more minutes, then add the kidneys and cook them for a minute or two.

    Pour the beef stock into the meat mixture and add the mustard, the bay leaf, the salt and pepper, and the Worcestershire sauce. Let the stew simmer, uncovered, for an hour and a half, giving it a stir every so often. If it starts looking a little dry, add a bit more beef stock. Once the 90 minutes is up, remove the stew from the heat and let it cool completely.

    Assemble And Bake The Pie

  • Heat the oven to 400 F. Roll out the pastry to 1/8-inch thick and wide enough to cover the pie dish.

  • Brush the rim of the pie dish with water and place a pie funnel in the center of the filling, if using.

  • Place the pastry over the dish and funnel, pressing it down, trimming to fit the rim of the dish.

  • Crimp the edges of the dough using your thumb and first finger.

    While the stew is cooling, preheat the oven to 425 degrees. Once the stew is sufficiently cool, spoon it into a deep pie pan and top it with a sheet of puff pastry.     • Stewing Steak cut into 1 cubes and Ox Kidney cut into 1/2 cubes. I like to buy a piece of topside and a whole kidney, that way I can cut the meat to size myself, and get rid of any fat or gristle that may be in pre-chopped meat.

    Using Up Leftover Puff Pastry

    One of the best things about this recipe is the leftover pastry. I slather the pieces with Nutella or strawberry jam and pop them in the oven for 10-15 minutes. The Guinness turns into a delicious gravy, and the meat becomes tender. After being divided into four of our many ramekins they are topped with pastry that is then cooked in the oven until puffy and golden.

Many recipes instruct to soak the kidneys in milk for at least 30 minutes, claiming that this process might purge any leftover animal bodily fluids and provide a milder flavor.     1 tablespoon dried parsley flakes
    1/4 cup celery, diced or 1/4 cup celery top
    1/2 cup fresh mushrooms, coarsely chopped
    1/2 cup carrot, diced
    • Remove skin and coarse parts from kidneys if not already done.
    • Wash in salted water.
    • Mix 1 cup flour with salt and pepper to taste in a plastic bag.
    • Cut kidneys into one-inch squares and place in bag with flour. Seal well and shake to dredge.
    • Remove kidney and pound remaining seasoned flour into 3/4 lb. of round steak.
    • Cut the round steak into one-inch pieces.
    • heat oil in heavy skillet and brown beef cubes on all sides.
    • Add onion and kidneys, cooking slowly until brown.
    • Cover meat with hot water, add bay leaf, parsley and celery or celery tops.
    • Cover tightly and simmer for 1 hour.
    • Remove meat to deep baking dish.
    • Add mushrooms and carrots.
    • Mix 2 tablespoons + 1 teaspoons flour with 1/2 cup cold water and add to skillet to thicken juices.
    • Pour over the meat and vegetables and top with pastry crust.
    • Bake in preheated 350F for 1 hour. Cover when pastry is golden to prevent over-browning.

    For the dough4 1/2 cups flour1 teaspoon salt1 1/2 cups margarine5-8 tablespoons cold water1 tablespoon white vinegar 1 egg For the filling175g Cow kidney350g beef1 medium onion1/3 cup flour 2 tablespoons vegetable oil2 seasoning cubes1 cup water1 teaspoon dry thyme1/4 cup stout *1/2 teaspoon salt1 teaspoon black pepper1/2 teaspoon dry chilli pepper *You can replace the stout with water.

    To make the dough, follow these instructions. Wrap dough and put in the fridge to relax for a minimum;of 20 minutes.

    Slit and peel of the thin white membrane covering the kidney if it has not been removed by the butcher.

    Slice the kidney through the middle lengthwise. Trim off the white centre and rinse kidney well.

    Rinse beef and cut both kidney and beef into bite-size chunks, set aside.

    Chop onions finely and set aside.

    Mix the flour with a little salt and dredge the beef with it, set aside.

    Pour vegetable oil in a dry saucepan or deep frying pan and place over high heat.

    When the oil is hot, add kidney and fry until browned, drain from oil and set aside.

    Fry the beef until browned. You can fry in 2 batches adding more oil if needed, drain from the pan into the plate with the kidney.

    Add the chopped onions to the pan and fry scrapping bits from the frying pan.

    Reduce the heat to medium-high, stirring often until brown along the edges.

    Add the fried kidney and beef, add seasoning cubes, water, thyme, stout, black pepper and chilli pepper.

    Stir well, cover and bring to a boil.

    Homemade Steak And Kidney Pie

    This homemade steak and kidney pie has it all its packed with juicy vegetables and succulent chunks of steak and kidney, swimming in delicious gravy and covered with a layer of crispy puff pastry.

    My favourite bit is how the edges of the pastry are all crispy and golden and the middle has rested on the pie filling, causing the underside of the pastry to soak up some of the lovely meaty gravy.; Yummy.

    This homemade steak and kidney pie is so easy to put together and doesnt take too long to make.; I normally make a double batch of the filling and freeze half, so when Im in a hurry I just have to defrost the filling in the microwave and cover with puff pastry and pop it in the oven for the ultimate homemade steak and kidney pie in half an hour.

    Also note how I havent crimped the edges of the pie thats not me being lazy, its because I love the extra bits of puff pastry that you can break off the sides!

    Its versatile too if you dont have puff pastry to hand then you could just serve the filling over rice with additional vegetables on the side.

    You dont have to stick to either my choice or quantities of vegetables you could use a mixure of any root vegetable.; Sweet potato would be good with this, or chopped butternut; or why not stir a handful of frozen peas through before putting it into the pie dish?

    Cook The Meat And Cabbage

    • Set the electric pressure cooker to Meat setting and cook for 15 minutes.
    • If you are using a normal pressure cooker you will need to cook on full pressure for 15 minutes.
    • If you are cooking this in a saucepan on the stove you should cover the saucepan with a lid. Bring it to the boil, then reduce the head to a simmer and leave for 40 minutes. Keep your eye on it if it starts to boil dry, top up with extra stock.
