While perhaps not my greatest source of worry, I have spent way too much time wondering about substituting dried beans for canned.

In the foodie world, the conventional wisdom is that beans cooked from dried are infinitely better than canned. But is that true? If you have a recipe that calls for canned or dried and you want to use the one not specified, how do you substitute? Are there good reasons to use one or the other? And finally, whats the best way to cook dried beans?

Im not a bean snob, as the Culinary Director of SeriousEats described himself. Although I do keep dried beans in my pantry, Ill use canned beans if they are handier, especially if I havent recently read something touting how much better dried beans are than canned. My Provencal Vegetable Soup au Pistou and my vegetarian chili both specify canned beans because using canned makes those recipes less intimidating.

Of course, I do occasionally use a boxed cake mix and Ive been known to take a few other shortcuts, so the all-things-homemade police would definitely pull me over for a moving violation or two. Still, I think that my use of both types of beans makes me more objective, because I really have no dog in this fight.

I dont claim that these questions are momentous in the grand scheme of things. But with several surprising take-aways , it was a fun to spend an afternoon searching out the answers.

Why Bother Cooking Dried Beans

Buying canned beans at the store is quicker than buying and cooking dried beans at home, but its also more expensive and creates unnecessary waste. Not to mention that dried beans cooked from scratch taste so much better.

Although I still buy canned beans on occasion who doesnt! I prefer keeping a stash of dried beans on hand so I can replenish my cooked beans supply throughout the month.

Dried beans keep for many months in your pantry and take up less space than canned beans. Since youll be cooking them yourself, you can control the amount of salt in the beans and there are no extra preservatives to worry about.

Cooking dried beans takes extra time on your part, but theres minimal hands-on prep work required. Best of all, cooked dried beans freeze wonderfully no need to can them yourself!

Can You Freeze Cooked Beans

As Ive said above, freezing beans is a fantastic way to have beans for months to come.

If freezing the beans, first leave them to cool down completely after cooking them. You can rinse them with cold water, to help speed up the process.

For shorter-term storage, these beans can also be kept in an airtight container for 3-5 days in the fridge. Just make sure that the beans are put in the fridge or freezer within two hours of them being cooked. Otherwise, bacteria can start to grow.

When you want to use the frozen beans, take out of the freezer and thaw. You can add them to meals while cooking, or just reheat them by themselves.

Before discussing how to cook them, you first need to know how to prepare dried beans. I recommend pouring the beans into a large bowl and sifting through them with your fingers. Discard any beans that are broken, as well as any pieces of stone or debris.

Then, youll need to soak the beans . Rinse the beans under running water, then cover them with 2 to 3 inches of tap water.

Let the beans soak for 8 hours to overnight. Then, prepare the dried beans as instructed below.

To Cook Canned Kidney Beans In A Pressure Cooker Or Instapot

Ill just say, I dont recommend cooking canned kidney beans in a pressure device. You will be able to cook your kidney beans quicker on the stovetop, however, if you simply need a recipe then here is the best one I have.

  • First, cook your bacon in a skillet on the stove top.
  • Place all of the other ingredients into the pressure cooker.
  • Crumble the bacon over the top and add 1 tsp of the bacon grease and stir everything together.
  • Close the lid, bring to pressure, cook at high pressure for 1 minute. Allow to slow release.
