Place broth in a 3- to 5-quart slow cooker. Slowly add grits, stirring constantly, to avoid lumps, set slow cooker aside. Heat oil in a large skillet over medium-high heat. For example, it can be combined with similarly slow-braised beef to make steak-and-kidney pie, one of the glories of British pub food. Alternatively, you can incorporate the cooked kidney into the kind of quick-cooked meal that’s impossible when it’s fresh. Slice or dice the finished organ meat, and employ it in a highly seasoned stir-fry.

Thick And Tasty Beef And Kidney Stew

Much as I love a barbeque outdoors in the summer, I have to admit I do love a good winter stew too. Theres something so comforting about tucking into a bowl of hearty stew, with a piece of crusty bread to soak up the delicious juices.

And this slow-cooker beef and kidney stew ticks all my boxes.

And as an added bonus you get all the delicious smells coming from the kitchen!

This recipe will feed 4 hungry people, but you can easily increase it to feed more just increase the amount of meat, stock and vegetables and up the seasoning slightly. And if you happen to make too much, dont worry. This stew freezes beautifully in fact I always make a double batch and freeze half for another meal.

  • Brown the steak and lamb kidneys remove from pan, reserving cooking juices, and place meat in slow cooker.
  • Add stock to the reserved cooking liquid and stir in stock cube pour over meat.
  • Add onion, mushrooms, tomato puree, red wine, bay leaves and garlic. Cook on High for 2 hours then on Low for 5 hours.
  • Turn back to High, add salt and pepper to taste thicken with the cornflour paste as needed. Allow the filling to cool before making pies.
  • Trim pastry to fit pie dishes or electric pie maker. Spoon in meat filling and cook in preheated hot oven until pastry is golden and filling is piping hot, about 30 to 35 minutes.

    Dont worry, our Toms Barn blog has not suddenly transformed itself into a Cookery Corner but last nights recipe has started something

    However, before I embark on any more, including already one from a guest allow me to write out the recipe for the Steak and Kidney Pudding recipe I rather tantalisingly only alluded to but didnt include in a post I wrote in March 2010 having successfully made one while we were staying in Toms Barn.

    We couldnt understand why there had been so many hits onto this page until I discovered there had been a lot of web chat about S& KPs and whether one could or not make them in a slow cooker and whether one had to cook the meet beforehand. Had I been more switched on I could have come to the rescue: yes, you most definitely can make a steak and kidney pudding in a slow cooker, and no, you dont have to cook the meat first

    The recipe below is taken from a wonderful book by Dianne Page Slow Cooking Properly Explained published by Right Way . I think I bought it from Amazon.

    Steak and Kidney Pudding Recipe:

    • 175g self-raising flour
    • 450g lean stewing steak, cut into cubes
    • 225 ox or lamb kidney, cut into cubes
    • 1 medium onion, finely chopped
    • Freshly milled black pepper

    Method:

    How To Freeze Beef And Kidney Stew

    As I mentioned above, this stew freezes really well. Just allow it to cool and then pack it into a Tupperware container, or a strong large Ziploc bag, and place it in the freezer. You can freeze this stew for up to 4 months.

    To use, either defrost in the refrigerator and then reheat in a large saucepan. You could also just tip the frozen stew directly into a large pan and leave it, covered, on the lowest heat setting, until it defrosts. Then just turn up the heat and bring to a boil.

    Assemble And Bake The Pie

  • Heat the oven to 400 F. Roll out the pastry to 1/8-inch thick and wide enough to cover the pie dish.

  • Cut a tiny hole in the center to slip over a steam funnel if using.

  • Brush the rim of the pie dish with water and place a pie funnel in the center of the filling, if using.

  • Place the pastry over the dish and funnel, pressing it down, trimming to fit the rim of the dish.

  • Crimp the edges of the dough using your thumb and first finger.

  • If not using a pie funnel, cut a small slash in the middle of the crust to allow steam to escape.

  • Brush the top of the pie with the beaten egg.

  • Toss the cubed beef and kidneys in the seasoned flour until well coated. Transfer to the slow cooker.
  • Cover with about 2 cupfuls hot but not boiling water, then add more hot water until there is 1 inch of water above the meat layer. The pot should not be more than two-thirds full, or there will not be room for the suet crust.
  • Cook for at least 60 minutes on ‘High’ then reduce to ‘Low’ and cook for 5 to 7 hours until the gravy has just thickened.
  • Make up the suet crust: Mix the flour, salt an suet then add enough cold water to make a paste. It should have a dropping consistency.
  • Drop dollops of the suet mix on top of the cooked meat layer. Cook on ‘High’ for 15 minutes, then reduce to ‘Low’ until the suet crust has stopped rising. Turn off the heat, but leave unopened for another 10 minutes. The suet crust should rise and become soft and fluffy.
  • Serve with a mix of fried onion and mushrooms, as well as a generous helping of peas, and maybe a slice of wholemeal bread.

    1 small carrot, peeled and finely diced

    450g pack Butcher’s Selection Beef Stewing Steak

    225g beef or lamb kidney, chopped

    1 tsp fresh thyme leaves, chopped

    1 heaped tbsp flour

    1 Knorr Beef Stock Pot, mixed with 100ml boiling water

    375g self-raising flour

    125g Atora The Original Shredded Beef Suet

    Pinch of mustard powder

    Method

    Heat the oil in the pan and cook the onion for 5 minutes. Add the carrot and cook for another minute. Remove with a slotted spoon, then brown the steak and kidney in batches. Add the onion and carrot, plus the other ingredients, to the pan. Simmer gently, uncovered, for 2 hours. Allow to cool.

    Mix the flour, suet, a pinch of salt and mustard . Pour in 250ml water and mix to make a dough.

    Knead briefly on a floured surface. Roll out three-quarters of the dough to 1cm thick. Use to line a well greased 1L pudding basin. Keep the remaining pastry for the lid.

    Spoon in the filling. Roll out the remaining pastry tomake a lid. Brush the edges with water, lay the lid on top and pinch to seal. Cover with foil, allowing 1-2cm room for the pudding to expand. Tie string around the basin so it’s easier to lift when hot.

    Chunky Slow Cooker Steak Pie

    If you are looking for a simple slow cooker steak pie filling, you do not need to look any further.

    This pie filling is quite simple, but the flavors will leave you wanting seconds. A simple combination of herbs, Worcestershire sauce, and beef stock creates a rich, deep gravy sauce. This sauce compliments the tender beef quite well and will leave you very satisfied.

    Much like most easy slow cooker recipes, this dish does not require much prep, yet the result is amazing. I highly recommend giving it a try if you are super limited in time.

    This recipe should make enough pie filling to be able to feed six people. However, with some side dishes, you should be able to feed even more people. I have a few ideas for side dishes further down the page.

    How To Make This Delicious Stew

    Start off by coating the cubed beef in seasoned flour and browning it in a frying pan. Do this over quite a high heat so that the meat browns nicely. If the heat is too low the meat will release juices and stew rather than brown. Dont overcrowd the pan either, rather brown the meat in batches. Once browned, transfer to the slow cooker.

    Next fry the chopped kidneys in the same pan until they turn colour, then add then to the beef in the slow cooker.

    Soften the onions and chopped garlic in the same pan. You may need to add an additional tablespoon of oil to do this. Transfer to the slow cooker.

    Finally, fry the mushrooms until they soften and release their juices. Transfer them into the slow cooker.

    Now add the shredded cabbage, grated potato and chopped carrots. Pour in the prepared stock and the red wine. Add the Worcestershire sauce, tomato paste and thyme. Season with salt and pepper, stir to combine all the ingredients and then set the heat on the slow cooker.

    Leave for 6 hours on a high setting, or for 8 hours on a low setting.

    If you find you do need to thicken the stew drizzle in a slurry of 2 teaspoons cornflour and 2 tablespoons water and let the stew simmer for a few minutes longer. Be careful. You may not need all the cornflour mixture.

    Do I Have To Soak The Kidneys Before Cooking

    Slow

    Soaking kidneys is a matter of personal choice. Many recipes instruct to soak the kidneys in milk for at least 30 minutes, claiming that this process might purge any leftover animal bodily fluids and provide a milder flavor. Some choose to soak the kidneys in cold water with vinegar and lemon juice, but others simply clean and rinse them well and claim that’s enough to get rid of impurities.

    I can take no credit for the recipe, only for being lucky enough to have discovered from it that you can indeed, and very successfully with minimum hassle, cook a truly mouthwatering S& KP in a slow cooker.

  • 450g lean stewing steak, cut into cubes
  • 225 ox or lamb kidney, cut into cubes
  • 1 medium onion, finely chopped
  • Freshly milled black pepper
  • Preheat the slow cooker on HIGH.
  • Grease a 1litre
  • Mix together the flour, suet and seasoning with enough water to make a soft dough.
  • Reserve 1/3 for the lid and roll out the remainder on a lightly floured surface. Use this to line the pudding basin.
  • Mix together the steak, kidney, onion, salt and pepper and pack carefully into the pastry-lined pudding basin. Add 2 tbsp water. The pudding should not quite fill the bowl to allow room for the crust to rise
  • Roll out the remaining pastry to make the lid. Moisten the edges of the pastry with water and press the lid into position. Cover with *greased greaseproof paper or foil.
  • Put the lid on, and cook on HIGH for 6-8 hours. Resist any temptation to peep!
  • Take the bowl out of the slow cooker, again using the **foil lifting strap. Remove the greaseproof paper, and turn the S& KP out onto a warmed plate.
  • Serve with some vegetables that you can cook at the last moment.
  • *I tore off enough to paper to allow me to fold a seam across the middle to give space for the pastry to rise, and sealed the paper down by tying string tightly round the rim.

    This week is, in true Great British Bake Off stylie, Pudding Week. I am old school in my eating habits and love the classics. A Steak and Kidney Pudding is right up there on my list of favourite dishes. I have, however, with some none too arduous recipe testing, created this dish to be cooked in your new best friend, the slow cooker. I dont mind steaming as a cooking method, but in your slow cooker, this old school classic quietly cooks itself. In the run up to Christmas I am desperate to claw back any time I can. So if you are looking for a trouble free dish for your family or guests, my Slow Cooker Steak and Kidney Pudding is right up your very busy, all shopped out, slightly stressed, street.

    Its winter, its nearly Christmas, stodge is the order of the day and there is no more delicious stodge than a Slow Cooker Steak and Kidney Pudding. Its also good hangover food, if those festive drinks parties are all getting a bit too much. Dont say I dont always have you and your wellbeing in mind.

    Make a start of this winter warmer by switching your slow cooker onto high and heavily buttering or oiling your 2 pint/1 litre pudding basin. Next, crack on with the super simple pastry. Take a large bowl and measure in the suet and self raising flour. Season well with salt and pepper.

    Stir through two tablespoons of plain flour, salt and pepper and mix well. Add the thinly sliced onion then tip into the pastry lined basin and pack right down.
