Grilled Beef Kidney Recipe is one of the best meals ive ever made. Organ meats like Kidneys arent so popular in the USA for some reason, though French chef and author Jacques Pepin says that beef kidneys can be a tender and tasty cut when prepared the right way.
They are a specialty food in most of the western Europe. Unlike lamb or veal kidneys, beef kidneys are big and tough and need long braising over non, moist heat to become tender. And when cooked right they are the most amazing meal to serve.
They receive a bath in a marinade of olive oil, balsamic and fresh herbs. Then they meet the grill to get a perfectly timed moment long enough to get a beautiful char on the outside, yet short enough to remain tender and pink at the center. That is about all the cooking which happens, and about the plate that they go! No fancy sauces, only a generous drizzle of Maldon crystals and black pepper.

Sliver them in two and fry in butter. If you want to make them even better, add some chopped onions and garlic. Add some seasoning and serve with mashed potatoes. You can also add a little bit of tomato sauce and a few drops of red wine vinegar. Or you could add chopped tomatoes and some red onion. This is a great way of cooking kidneys. They are very easy to digest and will make you feel full for hours. Also, this is really tasty. I love lamb kidney. But I dont know if I would call it a favorite. How To Make This Delicious Stew
Start off by coating the cubed beef in seasoned flour and browning it in a frying pan. Do this over quite a high heat so that the meat browns nicely. If the heat is too low the meat will release juices and stew rather than brown. Dont overcrowd the pan either, rather brown the meat in batches. Once browned, transfer to the slow cooker.
Next fry the chopped kidneys in the same pan until they turn colour, then add then to the beef in the slow cooker.
Soften the onions and chopped garlic in the same pan. You may need to add an additional tablespoon of oil to do this. Transfer to the slow cooker.
Finally, fry the mushrooms until they soften and release their juices. Transfer them into the slow cooker.
Now add the shredded cabbage, grated potato and chopped carrots. Pour in the prepared stock and the red wine. Add the Worcestershire sauce, tomato paste and thyme. Season with salt and pepper, stir to combine all the ingredients and then set the heat on the slow cooker.
Leave for 6 hours on a high setting, or for 8 hours on a low setting.
If you find you do need to thicken the stew drizzle in a slurry of 2 teaspoons cornflour and 2 tablespoons water and let the stew simmer for a few minutes longer. Be careful. You may not need all the cornflour mixture.

Do You Have To Soak Kidney Before Cooking
In many recipes, it is recommended to soak the kidney in brine prior to cooking. This draws out the kidney flavor and mellows the taste significantly.
I would do this for grilling or pan-frying but not in this recipe where we boil.
How do you make kidney taste good?
You boil the piss out of it!
After boiling, the kidney tastes good. There is no hint of ammonia or potentially offensive smell or taste.
Maintaining a full boil is important for the entire length of cooking. Regulate temperature by adjusting the flame and setting the lid more or less cracked to find the sweet spot of boiling but not boiling over.
Each stove is a little different. You will soon learn how to achieve this in your own kitchen. I cook on a medium burner and reduce the flame from high to medium-low once kidney is added. The lid gets cracks by about an inch or so after kidney is added.

As I mentioned above, this stew freezes really well. Just allow it to cool and then pack it into a Tupperware container, or a strong large Ziploc bag, and place it in the freezer. You can freeze this stew for up to 4 months.
To use, either defrost in the refrigerator and then reheat in a large saucepan. You could also just tip the frozen stew directly into a large pan and leave it, covered, on the lowest heat setting, until it defrosts. Then just turn up the heat and bring to a boil.

You can skip washing the kidney when cooking it raw. Just boil it in enough water to cover it completely, simmer over low heat for about 30 minutes.
