What To Do With A Pork Kidney

I’ve been bestowed with some lovely pieces of local pork and now I’m trying to figure out what to do with them. Although I love eating pork I can’t say I’ve spent much time cooking it, so I’m at a loss for what to do with all these lovely pieces of meat. Some of it I will freeze, but I would like to use the kidney and the belly this week. Anyone have any recipe ideas? I was thinking of doing some sort of salad with the kidney, perhaps incorporating some of my CSA veggies , but I’m not really sure how. I was given the advice to cook the kidney quite briefly as, apparently, overcooked pork kidney tastes awful. Your favorite Pork Belly recipes would be much appreciated as well.

I’m constantly on the lookout for sources of cheap and delicious protein. So imagine my intrigue when I see pork kidney is $2/lb at the local coop. So I’ve resolved to buy myself a couple tomorrow, cook them up, and see how they taste.

Does anyone out there have any recipe recommendations? I’ve seen a lot of asian-style recipes out there, but I’m not as comfortable with asian cuisine, though I’m always willing to try new stuff. Does anyone have any specific preparation tips that might come in handy for creating my own recipes in the future .

I’ve also seen a lot of people talk about the ammonia flavor they can sometimes get. Some sites say to soak in milk, water, or buttermilk overnight, some say don’t bother. Which is best? Should I do that every time? Is it a good way to save a kidney that smells of ammonia? Is it not necessary when it smells very fresh?
