How To Get Rid Of Urine Smell When Cooking Kidneys

My local groceries sometimes have pork kidneys, and they are amazingly cheap.

Being both an adventurous eater and cheapskate I had to try them, and they arent bad at all a bit like very mild liver in both taste and texture.

But there is an issue in that I have almost no sense of smell, my wife does though and she was going crazy searching the house because she thought our five year old had peed in a corner or something. Eventually she realized the odor was from the filth I was cooking and she said it was so strong she felt to vomit.

I did not notice any urine taste to the pork kidneys, but is there any way to cut the smell?

I’ve been bestowed with some lovely pieces of local pork and now I’m trying to figure out what to do with them. Although I love eating pork I can’t say I’ve spent much time cooking it, so I’m at a loss for what to do with all these lovely pieces of meat. Some of it I will freeze, but I would like to use the kidney and the belly this week. Anyone have any recipe ideas? I was thinking of doing some sort of salad with the kidney, perhaps incorporating some of my CSA veggies , but I’m not really sure how. I was given the advice to cook the kidney quite briefly as, apparently, overcooked pork kidney tastes awful. Your favorite Pork Belly recipes would be much appreciated as well.

When I was growing up, liver appeared regularly on our dinner table. These days I am getting back into organ meats and offal, specially kidneys, liver, heart, tongue and oxtail though still not brave enough for sweetbreads and tripe!

Although no longer a favourite of the Western palate, kidneys, liver, heart etc are some of the most nutritionally dense foods in existence. Organ meats have distinctive flavours that people tend to love or hate. In the past couple of years and encouraged by himself, I have started to embrace these less popular cuts and wow new respect is born, I love them!

Liver and kidneys are probably the most widely available forms of offal and are as simple to cook as steak. They need to be very fresh though especially kidneys, which should be firm and juicy and without a strong smell . Depending on the animal the taste will vary in strength, the strongest being beef and the mildest pig. The most important thing when sourcing organ meat specially liver, kidney or sweetbreads is to go for organic or at least outdoor reared grass-fed animals.

Back to the dish in question. I find the flavour and taste of this dish a real delight. The kidneys are so delicate, and they melt in your mouth like little jewels. The dish is so simple to prepare and equally good for breakfast, brunch or lunch. You could even serve it as a starter at your next dinner party and see what reaction you get!

I’m constantly on the lookout for sources of cheap and delicious protein. So imagine my intrigue when I see pork kidney is $2/lb at the local coop. So I’ve resolved to buy myself a couple tomorrow, cook them up, and see how they taste.

Does anyone out there have any recipe recommendations? I’ve seen a lot of asian-style recipes out there, but I’m not as comfortable with asian cuisine, though I’m always willing to try new stuff. Does anyone have any specific preparation tips that might come in handy for creating my own recipes in the future .

I’ve also seen a lot of people talk about the ammonia flavor they can sometimes get. Some sites say to soak in milk, water, or buttermilk overnight, some say don’t bother. Which is best? Should I do that every time? Is it a good way to save a kidney that smells of ammonia? Is it not necessary when it smells very fresh?

Any other assorted thoughts?
